Autumn pumpkin porridge with cinnamon apples

If the season of colours was a dish, it would surely be this heart-warming, smooth & spicy pumpkin porridge – made with coconut milk, spices and pumpkin puree and topped with roasted cinnamon apples for extra seasonal flavour!

The apples also happened to be homegrown and handpicked, which made this comforting November delight even more special!

Ingredients:

1 cup oats

1 cup coconut milk (I used here coconut milk from a can for smoothness)

1 cup or less water

2/3 cup pumpkin puree (made from roasted pumpkin)

1/2 tsp cinnamon + some extra for the apples

1/4 tsp ginger

pinch or nutmeg and clove

1 big apple – chopped into small pieces

Bring the oats, coconut milk and water to boil in a sauce pan. Once boing reduce the heat and let it simmer till the liquid is absorbed. If needed add some extra water. Stir from time to time. Once the porridge is almost done add the pumpkin puree and spices and leave it just for few more minutes.

Simultaneously prepare the apples. Cut the apple in small pieces, sprinkle with lemon juice to avoid browning and cover with cinnamon. Put the apples in a non-sticky pan and let them cook on low heat. By now your kitchen should be filled with fragrance of delicious cosiness! Remove from heat once the apples are soften.

Serve the pumpkin in your favourite bowl and top with the cinnamon apples. If you like you can also sweeten it with bit of honey or maple syrup. Garnish with nuts, seed and lots of autumn love xx
