Light and fruity this apricot tart is just the perfect summer treat!
It wasn’t my first time in Portugal at all, but this time was really my favourite! Perhaps because of the breathtaking sunsets on Douro river, or the intricacy of the azulejos walls, or the lost tracks through the orange and magnolia trees, or because of the natas mornings or the Port wine nights.
After finally buying a nice food processor I had this urge to blend pretty much anything. With this craving and a lot of just-about-to-die food in the fridge this recipe was born, which turned out to be a refreshing delicious spring celebration of everything green!
I have been wanting to make these summer rolls ever since I came back from Bali, which is now nearly 9 months ago! Which is also more than enough time to start missing sunshine, beaches and island life and these fresh healthy coconutty rolls brought a moment of true summer bliss.
